Rico Corn Rice Makes Healthy Yummy

A few months ago, I was able to find RiCo Corn Rice in the grocery shelves. I immediately bought a 1-kilo pack to try it because I saw on the label that it has a lower glycemic index. I remember asking my son if he'd like to try it and he said yes. I knew he would agree because he loves to try out "unusual things."

But you know, corn rice is not really new to me. As a young girl, I have already tried eating corn rice during the many summers I spent in the province. But RiCo corn rice is different because it's orange-colored. I remember eating white corn rice and its texture is softer and stickier.


RiCo corn rice is made of 100% Philippine-grown corn fortified with iron and calcium. According to the package, corn rice is:

  • For controlled blood sugar level - It's best for diabetics and pre-diabetics because of its low glycemic index.
  • For good eyesight - Corn contains the anti-oxidants beta-carotene and lutein.
  • For increased energy - Corn rice provides adequate carbohydrates for energy as well as Vitamin B complex.
  • Aflatoxin safe - These toxins are usually found in stored rice and are hazardous to health.


Cooking RiCo corn rice is quite easy and it's similar to cooking regular rice except that it needs a bit more water. When my mom saw this, she immediately told me that it would require more water even before she saw the package instructions. Again, it's based on her experience in the province. White corn rice, apparently, would not need extra water.

Some important things to remember, though:
  1. The grains should not be washed to preserve its water soluble nutrients.
  2. If a loose and fluffy consistency is preferred, RiCo rice corn should be cooked like pasta. Boil the water first, put the corn rice until it's cooked, then drain the excess water.


My cooked RiCo rice corn is a hit! I partnered it with grilled squid, much to the delight of my boys because they thought I cooked Java Rice, hehe... (Sosyal daw!) The husband did not know that it was rice corn until I told him that it was. It basically tastes the same as regular rice. Actually, it's yummier if you ask me.

RiCo corn rice is available in 1-kg, 2-kg, and 5-kg packs. The 1-kg pack I bought from SM Supermarket cost Php 70 while a 2-kg pack costs Php 125. I'm trying out new recipes using Rico corn rice so better stay tuned. By the way, recipes are available at yummyhealthy.ph.

PRAYER FOR ALL SAINTS DAY and ALL SOULS DAY: Rosary and Litany for the Holy Souls in Purgatory

This is the first All Saints' Day and All Souls' Day that we will be celebrating without my dad who passed away 6 months ago. Tonight, we will be staying in my parents' place and we'll be praying the Rosary and Litany for the Holy Souls in Purgatory.  Just sharing what I compiled from Catholic sources in the Internet for those who may need this tonight.


Rosary for the Holy Souls

V. O Lord, open my lips.
R. And I shall praise your name.
V. O God, come to my aid.

All: I believe in one God, the Father almighty, maker of heaven and earth, of all things visible and invisible. I believe in one Lord Jesus Christ, the Only Begotten Son of God, born of the Father before all ages. The Sorrowful Mysteries

1. The Agony in the Garden
Lord Jesus Christ, through Your bloody sweat of fear that You shed on the Mount of Olives, we ask You to have mercy on the Holy Souls in Purgatory. Bring to completion their purification and console them with the Cup of heavenly comfort.

• V: Lord, grant them eternal rest… R: and let perpetual light shine upon them.
• (Fatima Prayer:) O my Jesus, forgive us our sins, save us from the fires of hell. Lead all souls to heaven, especially those in most need of Your mercy.

2. The Scourging at the Pillar
Lord Jesus Christ, through Your painful Scourging which You tolerated so patiently for us sinners, we ask You to have mercy on the Holy Souls in Purgatory! Bring them to live for ever with Christ and give them eternal relief.

3. The Crowning with Thorns
Lord Jesus Christ, through Your painful Crowning which You suffered so patiently for us sinners, we ask You to have mercy on the Holy Souls in Purgatory and give them the crown of eternal delight.

4. The Carrying of the Cross
Lord Jesus Christ, through Your painful Carrying of the Cross, which You suffered so patiently for us sinners, we ask You to have mercy on the Holy Souls in Purgatory! Bring them to the everlasting peace of perfect life with the Most Holy Trinity and lead them into eternal joy.

5. The Crucifixion of Jesus
Lord Jesus Christ, through Your painful Crucifixion, which You suffered so patiently for us sinners, we ask You have mercy on the Holy Souls in Purgatory! Turn Your Holy Face towards them and let them be in Paradise with You today.

All: Lord, Jesus Christ, through Your five Holy Wounds and through all of Your Sacred Blood that You shed, we ask You to have mercy on the Holy Souls in Purgatory, and in particular on our parents, spouses, relatives, spiritual guides and benefactors. Complete the healing of their purification and let them enjoy and participate fully in Your Salvation. Amen.

Hail Holy Queen, Mother of mercy, hail our life, our sweetness and our hope. To Thee do we cry, poor banished children of Eve; to Thee do we send up our sighs, mourning and weeping in this valley of tears. Turn then, most gracious Advocate, Thine eyes of mercy towards us and after this, our exile, show onto us the blessed fruit of Thy womb, Jesus. O clement, O loving, O sweet Virgin Mary.
